To make speedy vegetarian air fryer chip nachos, start by gathering your ingredients, which include tortilla chips, shredded cheese such as cheddar or a Mexican blend, and a variety of vegetables like bell peppers, onions, tomatoes, and sweet corn. You can also add beans such as black beans or kidney beans for extra protein. Chop all the vegetables into small, evenly sized pieces so they cook quickly and distribute well over the nachos. If you like, you can prepare mild or spicy seasonings like paprika, cumin, chili powder, or garlic powder to sprinkle over the vegetables for extra flavor.

Preheat the air fryer to around 180°C (350°F) to ensure even cooking and crisping. Arrange a layer of tortilla chips on a small air fryer–safe tray or directly in the air fryer basket if it fits without overcrowding. Be careful not to overlap the chips too much, as this will prevent the toppings from melting evenly and crisping properly.

Sprinkle a portion of shredded cheese over the chips, making sure it is distributed evenly so every bite gets some melted cheese. Add the chopped vegetables and beans on top of the cheese, spreading them out so they cover most of the chips without forming a thick mound. Once the cheese is fully melted and the vegetables are tender but still slightly crisp, carefully remove the nachos from the air fryer. You can add fresh toppings at this stage, such as chopped cilantro, sliced jalapeños, diced avocado, or a drizzle of sour cream or salsa to enhance flavor and freshness. For a little extra heat, sprinkle crushed chili flakes over the top or squeeze some lime juice to balance the richness of the cheese.

Serve the nachos immediately while they are warm and the cheese is gooey. The final dish should feature crispy chips layered with melted cheese, tender yet slightly crunchy vegetables, and flavorful beans, providing a satisfying combination of textures and flavors in every bite. This quick and easy method allows you to make a vegetarian version of nachos in the air fryer without needing an oven or stovetop.
