Cheese scones are soft on the inside, lightly crisp on the outside, and packed with rich cheddar flavor. They are quick to prepare, require simple ingredients, and are perfect for breakfast, brunch, or serving alongside soup.

This recipe is written with clear, detailed instructions to ensure consistent and reliable results.


Ingredients (Makes 8โ€“10 Scones)

  • 300 g (2ยฝ cups) self-raising flour
  • 1 teaspoon baking powder
  • ยฝ teaspoon salt
  • 75 g (โ…“ cup) cold unsalted butter, cubed
  • 150 g (1ยฝ cups) mature cheddar cheese, grated
  • 1 teaspoon English mustard (optional, enhances flavor)
  • 180 ml (ยพ cup) whole milk
  • 1 egg, beaten (for glazing)

If you do not have self-raising flour, use plain flour and add 2 teaspoons baking powder instead.


Step 1: Prepare the Oven and Tray

Preheat your oven to 200ยฐC (400ยฐF).
Line a baking tray with parchment paper.

A fully heated oven is essential for proper rise.


Step 2: Mix the Dry Ingredients

In a large bowl, combine:

  • Flour
  • Baking powder
  • Salt

Stir gently to distribute everything evenly.


Step 3: Rub in the Butter

Add the cold, cubed butter to the flour mixture.

Using your fingertips, rub the butter into the flour until it resembles coarse breadcrumbs.

Work quickly and lightly. Overworking will make the scones dense.


Step 4: Add the Cheese

Stir in most of the grated cheddar, reserving a small handful for topping.

If using mustard, mix it into the milk before adding.


Step 5: Form the Dough

Gradually add the milk while mixing with a knife or spatula.

Bring the mixture together into a soft dough.

The dough should be slightly sticky but not wet.
If it feels too dry, add a small splash of milk.

Avoid kneading heavily. Handle gently.


Step 6: Shape the Scones

Lightly flour your work surface.

Turn out the dough and pat it into a round about 2โ€“3 cm thick.

Use a round cutter (about 5โ€“6 cm wide) to cut out scones.

Press straight down without twisting. Twisting can prevent a good rise.

Gather scraps gently and reshape to cut remaining scones.


Step 7: Glaze and Top

Place the scones on the prepared tray.

Brush the tops lightly with beaten egg.

Sprinkle the reserved cheese over each one.

This creates a golden, savory crust.


Step 8: Bake

Bake for 12โ€“15 minutes.

They are ready when:

  • The tops are golden brown
  • The cheese is bubbling
  • The bases sound hollow when tapped

Remove and cool slightly on a wire rack.


Texture and Flavor Tips

  • Use cold butter for flakier texture.
  • Do not overmix the dough.
  • Keep the dough fairly thick for tall scones.
  • Strong cheddar gives the best flavor.

Variations

Chive and Cheese
Add 1 tablespoon finely chopped fresh chives.

Spicy Cheese
Add a pinch of cayenne pepper or chopped jalapeรฑos.

Herb and Garlic
Add ยฝ teaspoon garlic powder and mixed dried herbs.

Extra Cheesy
Fold in small cubes of cheese along with the grated cheddar.


Serving Suggestions

Serve warm with:

  • Salted butter
  • Cream cheese
  • Tomato chutney
  • Alongside soup or stew

They are best eaten fresh on the day of baking.


Storage

Store in an airtight container for up to 2 days.

To refresh, warm in the oven at 180ยฐC (350ยฐF) for 5 minutes.

They can be frozen for up to 2 months. Reheat from frozen in a moderate oven.
