For the Beef

  • 2 cloves garlic, minced

  • 3 tablespoons water
  • 1 teaspoon cornflour mixed with 1 tablespoon water (slurry)

Optional Garnish

  • Spring onions, sliced
  • Sesame seeds

Step 1: Prepare the Beef Properly

Thin slicing is crucial. Place the beef in the freezer for 20โ€“30 minutes before cutting. This firms the meat and makes it easier to slice very thinly.

Cut against the grain into strips about ยฝ cm thick.

Thin strips ensure tenderness and crisp texture.


Step 2: Marinate for Flavor and Tenderness

In a large bowl, combine:

  • Soy sauce
  • Sesame oil
  • Egg white
  • Salt and pepper

Add the sliced beef and mix thoroughly.

Step 5: Make the Chilli Sauce

In a small saucepan over medium heat:

  1. Add garlic and ginger. Cook 30 seconds until fragrant.
  2. Stir in soy sauces, sweet chilli sauce, vinegar, honey, and water.
  3. Bring to a gentle simmer.
  4. Add sliced chillies.
  5. Stir in the cornflour slurry.

Simmer for 1โ€“2 minutes until thick and glossy.

The sauce should coat the back of a spoon.


Step 6: Combine Without Losing Crispiness

Place the crispy beef in a large bowl.

Pour the hot sauce over it.

Toss quickly and gently until evenly coated.

Serve immediately to maintain crunch.


Texture Tips for Best Results

  • Slice thinly and evenly.
  • Avoid overcrowding the air fryer basket.
  • Spray lightly with oil to encourage browning.
  • Add sauce just before serving.

Spice Level Control

Mild: Use only sweet chilli sauce and remove fresh chillies.
Medium: Use one fresh chilli.
Hot: Add extra chillies or a pinch of chilli flakes.

Storage

Refrigerate leftovers for up to 2 days.
Reheat in the air fryer at 180ยฐC for 3โ€“4 minutes.

Make It Even Better

For restaurant-style texture, you can double air fry:

  • First cook: 6โ€“7 minutes
  • Rest 3 minutes
  • Second cook: 3โ€“4 minutes
