Air fryer roast chicken is a simple way to cook a whole chicken or chicken pieces that are juicy on the inside with golden, crispy skin on the outside. The air fryer circulates hot air around the chicken, giving it a roasted texture without the need for a conventional oven. This method works well for a small whole chicken, thighs, drumsticks, or a combination of pieces.

Ingredients

1 whole chicken (about 3–4 pounds) or equivalent chicken pieces (thighs, drumsticks, breasts)
2 tablespoons olive oil or melted butter
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1/2 teaspoon dried thyme or rosemary (optional)
1 lemon, halved (optional)
3–4 garlic cloves, smashed (optional)

Step 1: Prepare the Chicken

If using a whole chicken, remove any giblets from the cavity and pat the chicken dry with paper towels. For pieces, pat them dry as well. Drying the chicken helps achieve crispy skin.

Step 2: Season the Chicken

In a small bowl, combine salt, black pepper, garlic powder, onion powder, paprika, and dried herbs if using.

Brush the chicken with olive oil or melted butter, then rub the seasoning mixture evenly over the chicken, making sure to coat both the outside and under the skin if possible.

For whole chicken, you can place lemon halves and smashed garlic cloves inside the cavity for extra flavor.

Step 3: Preheat the Air Fryer

Preheat the air fryer to 360°F (180°C) for about 3–5 minutes. Preheating ensures even cooking and helps crisp the skin.

Step 4: Arrange the Chicken

Place the whole chicken or pieces in the air fryer basket in a single layer. Avoid overcrowding so the hot air can circulate properly. For whole chicken, breast side down initially helps the legs cook evenly.

Step 5: Cook the Chicken

For a whole 3–4 pound chicken, cook at 360°F (180°C) for 30 minutes breast side down, then flip the chicken breast side up and cook for an additional 20–30 minutes.

For chicken pieces, cook at 360°F (180°C) for 20–25 minutes, then flip and cook for another 15–20 minutes until golden and crispy.

Step 6: Check for Doneness

Use a meat thermometer to check the internal temperature. The thickest part of the chicken (breast or thigh) should reach 165°F (74°C). The juices should run clear when pierced.

Step 7: Rest the Chicken

Remove the chicken from the air fryer and place it on a serving platter. Let it rest for 10–15 minutes before carving. Resting allows the juices to redistribute and keeps the meat moist.

Step 8: Carve and Serve

For a whole chicken, carve into portions: breasts, thighs, legs, and wings. Serve with sides such as roasted vegetables, potatoes, rice, or a fresh salad. Chicken pieces can be served directly with your favorite sides or sauces.

  • Lightly oiling the skin helps it brown evenly.

  • Flipping the chicken halfway through cooking gives even color and crispiness.

Storage Instructions

Store leftover roast chicken in an airtight container in the refrigerator for up to 3 days. Reheat in the air fryer at 350°F (175°C) for 5–10 minutes until warm and crispy.

Freezing Instructions

Cooked chicken can be frozen for up to 2 months. Wrap portions tightly in plastic wrap and place in a freezer-safe bag. Thaw overnight in the refrigerator before reheating in the air fryer.

Variations

  • Add spices like smoked paprika, chili powder, or curry powder for different flavor profiles.
  • Insert fresh herbs like rosemary, thyme, or sage under the skin for an aromatic flavor.
  • For a citrus twist, rub the chicken with lemon or orange zest in addition to the seasoning.
  • For extra flavor, brush with garlic butter during the last 5 minutes of cooking.
