Coconut Lime Chicken

Ingredients

  • 500 g chicken breasts or thighs, cut into pieces
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 cup coconut milk
  • Juice and zest of 1 lime
  • 1 tablespoon soy sauce or fish sauce (optional)
  • 1 teaspoon honey or brown sugar (optional)
  • Fresh cilantro or parsley for garnish (optional)

Instructions

  1. Season the Chicken
    Pat the chicken pieces dry. Rub with olive oil, salt, black pepper, garlic powder, and paprika.
  2. Cook the Chicken
    Heat a skillet over medium heat. Add the chicken pieces and cook for 6–8 minutes per side, or until golden brown and cooked through.
  3. Prepare the Sauce
    In a small bowl, mix coconut milk, lime juice, lime zest, soy sauce or fish sauce, and honey or sugar if using.
  4. Combine Chicken and Sauce
    Pour the coconut lime sauce over the cooked chicken. Simmer for 3–5 minutes until the sauce thickens slightly and coats the chicken.
  5. Serve
    Transfer the chicken to a serving plate and spoon sauce over the top. Garnish with fresh cilantro or parsley if desired.

Serving Suggestions

Serve with steamed rice, quinoa, or roasted vegetables for a light and flavorful meal.
