Ingredients
- 500 g chicken breasts or thighs, cut into pieces
- 1 tablespoon olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 cup coconut milk
- Juice and zest of 1 lime
- 1 tablespoon soy sauce or fish sauce (optional)
- 1 teaspoon honey or brown sugar (optional)
- Fresh cilantro or parsley for garnish (optional)
Instructions
- Season the Chicken
Pat the chicken pieces dry. Rub with olive oil, salt, black pepper, garlic powder, and paprika. - Cook the Chicken
Heat a skillet over medium heat. Add the chicken pieces and cook for 6–8 minutes per side, or until golden brown and cooked through. - Prepare the Sauce
In a small bowl, mix coconut milk, lime juice, lime zest, soy sauce or fish sauce, and honey or sugar if using. - Combine Chicken and Sauce
Pour the coconut lime sauce over the cooked chicken. Simmer for 3–5 minutes until the sauce thickens slightly and coats the chicken. - Serve
Transfer the chicken to a serving plate and spoon sauce over the top. Garnish with fresh cilantro or parsley if desired.
