Air Fryer Steak Recipe:

Ingredients

  • 2 boneless ribeye steaks, about 1 to 1.5 inches thick (you can substitute with sirloin, striploin, or filet mignon)
  • 2 tablespoons olive oil or avocado oil
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika (optional for a smoky flavor)
  • 1 teaspoon dried rosemary or thyme, crushed (optional)
  • 1 tablespoon unsalted butter (for finishing)
  • Fresh herbs for garnish (such as rosemary, thyme, or parsley)

Optional Marinade (if you want extra flavor):

  • 3 tablespoons soy sauce
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 2 cloves garlic, minced
  • 1 teaspoon honey

Equipment Needed

  • Air fryer with a basket or tray
  • Tongs
  • Meat thermometer (instant-read preferred)
  • Small bowl (for seasoning or marinade)
  • Plate for resting steak

Step 1: Choosing and Preparing the Steak

  1. Choose steaks that are evenly thick; uneven thickness can cause inconsistent cooking.
  2. Pat the steaks dry with paper towels. This ensures a better crust when cooked.
  3. If using a marinade, mix the marinade ingredients in a small bowl and coat the steaks evenly. Cover and refrigerate for at least 30 minutes, up to 4 hours. Avoid marinating more than 24 hours as it may break down the meat excessively.

  1. Lightly spray or brush the air fryer basket with oil to prevent sticking.
  2. Ensure there is space between the steaks; overcrowding can cause uneven cooking. For 2 steaks, place them side by side without touching.

Step 4: Cooking the Steak

  1. Place the steaks in the air fryer basket.
  2. Cook at 400ยฐF (200ยฐC) for 10-12 minutes for medium-rare (depending on thickness). Flip halfway through the cooking process.
  3. Adjust timing based on desired doneness:
    • Rare: 8-10 minutes
    • Medium-rare: 10-12 minutes
    • Medium: 12-14 minutes
    • Medium-well: 14-16 minutes
    • Well-done: 16-18 minutes

Tip: Always use a meat thermometer to check doneness:

  • Rare: 125ยฐF (52ยฐC)
  • Medium-rare: 135ยฐF (57ยฐC)
  • Medium: 145ยฐF (63ยฐC)
  • Medium-well: 150ยฐF (66ยฐC)
  • Well-done: 160ยฐF (71ยฐC)

Step 5: Optional Butter Finish

  1. During the last 2 minutes of cooking, open the air fryer and place a small pat of butter on top of each steak.
  2. Close the air fryer and allow the butter to melt, giving the steak a rich, glossy finish.
  3. You can also sprinkle extra herbs like rosemary or thyme at this stage for aroma.

Step 6: Resting the Steak

  1. Remove steaks from the air fryer and place them on a plate.
  2. Cover loosely with foil and let rest for 5-10 minutes.
  3. Resting allows the juices to redistribute, ensuring the steak stays tender and juicy.

Step 7: Serving Suggestions

  • Slice against the grain for maximum tenderness.
  • Serve with garlic mashed potatoes, roasted vegetables, or a fresh salad.
  • Optional sauces: chimichurri, peppercorn cream sauce, or simple garlic butter.
