To make crispy air fryer sushi rice paper rolls, begin by preparing the filling, as everything needs to be ready before working with the rice paper. You can use a variety of ingredients such as cooked chicken, shrimp, tofu, or simply vegetables like shredded cabbage, carrots, cucumbers, and spring onions. If you prefer a more traditional sushi-inspired flavor, you can also include cooked rice seasoned lightly with vinegar, sugar, and salt. Make sure all fillings are sliced thinly so they roll easily and cook evenly.
Next, set up a clean workspace with a shallow bowl of warm water. Take one sheet of rice paper and dip it briefly into the water for a few seconds until it becomes soft and pliable, but not too soggy, as it will continue to soften as you work. Lay the softened rice paper flat on a clean surface or plate. Place a small portion of your prepared filling near the lower edge of the rice paper, being careful not to overfill, as this can cause tearing and make rolling difficult.
Fold the bottom edge of the rice paper over the filling, then fold in the sides tightly, and continue rolling upward to form a compact roll, similar to a spring roll. Repeat this process with the remaining rice paper sheets and filling. As you finish each roll, place it on a plate lined with parchment paper to prevent sticking.
