Yogurt cake: 3 ingredients

Yogurt Cake (3 Ingredients)

Yogurt cake made with only three ingredients is a simple and soft dessert that is light, slightly tangy, and naturally creamy. This cake is popular because it requires very few ingredients and minimal preparation, yet it produces a moist and tender texture. The yogurt provides both flavor and moisture, while the eggs and flour create structure and softness. This cake can be served plain or enhanced with fruits, honey, or powdered sugar.

Preparation Time: 15 minutes
Baking Time: 35–40 minutes
Total Time: About 55 minutes
Servings: 6–8 slices

Ingredients

2 cups plain yogurt (full-fat or Greek yogurt works best)
3 large eggs
1 cup self-rising flour

Equipment

Mixing bowl
Whisk or hand mixer
Measuring cups
Spatula
8-inch round cake pan or small loaf pan
Parchment paper
Cooling rack

Step 1: Prepare the Baking Pan

Begin by preparing the cake pan. Lightly grease the inside of an 8-inch round cake pan with butter or oil. Line the bottom with parchment paper so the cake releases easily after baking.

Step 2: Preheat the Oven

Preheat the oven to 350°F (175°C). Allow the oven to fully heat before placing the cake inside. A properly preheated oven helps the cake rise evenly.

Step 3: Prepare the Yogurt

Place the yogurt into a large mixing bowl. If the yogurt contains extra liquid on top, stir it gently until smooth. The yogurt should be creamy and uniform in texture before mixing with the other ingredients.

Step 4: Add the Eggs

Crack the eggs into the bowl with the yogurt. Using a whisk or hand mixer, beat the eggs and yogurt together until the mixture becomes smooth and slightly fluffy. This process usually takes about 1 to 2 minutes.

Step 5: Add the Flour

Gradually add the self-rising flour to the yogurt and egg mixture. It is best to add the flour in two or three small portions. Stir gently after each addition to prevent lumps from forming.

Continue mixing until a smooth batter forms. The batter should be thick but pourable.

Step 6: Rest the Batter

Allow the batter to rest for about 5 minutes. This short resting time allows the flour to fully absorb the liquid ingredients, which helps create a softer cake texture.

Step 7: Pour the Batter into the Pan

Pour the prepared batter into the greased cake pan. Use a spatula to spread the batter evenly across the pan and smooth the surface.

Gently tap the pan on the counter a few times to release any trapped air bubbles.

Step 8: Bake the Cake

Place the cake pan in the center rack of the preheated oven. Bake for 35 to 40 minutes.

During baking, the cake will rise and develop a light golden color on top. The edges will begin to pull slightly away from the sides of the pan.

Step 9: Check for Doneness

To check if the cake is fully baked, insert a toothpick into the center of the cake. If it comes out clean or with only a few crumbs, the cake is done.

If the toothpick shows wet batter, continue baking for another 3 to 5 minutes and check again.

Step 10: Cool the Cake

Remove the cake from the oven and allow it to cool in the pan for about 10 minutes. After this time, gently loosen the edges with a knife if necessary.

Carefully remove the cake from the pan and place it on a cooling rack to cool completely.

Step 11: Slice and Serve

Once the cake has cooled, slice it into pieces using a sharp knife. The texture should be soft, moist, and slightly fluffy.

Serving Suggestions

This yogurt cake can be served plain or with simple toppings. Many people enjoy it with a dusting of powdered sugar or a drizzle of honey. Fresh fruits such as berries, sliced peaches, or mango can also be added for extra flavor.

For a richer dessert, serve slices of the cake with whipped cream or a scoop of vanilla ice cream. It can also be lightly toasted and spread with jam or fruit preserves.

Storage Instructions

Store the yogurt cake in an airtight container at room temperature for up to 2 days. If the weather is warm, it is better to store it in the refrigerator.

When refrigerated, the cake can last for about 4 to 5 days. Allow the cake to come to room temperature before serving for the best texture.

Freezing Instructions

This cake can be frozen for longer storage. Wrap individual slices tightly in plastic wrap and place them in a freezer-safe container or bag.

The cake can be stored in the freezer for up to 2 months. To serve, thaw the slices at room temperature or warm them gently in the microwave.

Variations

Although the basic recipe uses only three ingredients, small additions can create different flavors. A teaspoon of vanilla extract can provide a sweet aroma. Lemon zest or orange zest can add a fresh citrus flavor.

Some people also fold in small amounts of fruit such as blueberries or chopped strawberries before baking. Another option is to add a small amount of sugar if a sweeter cake is desired.

This simple yogurt cake is appreciated for its minimal ingredients and easy preparation while still producing a soft, satisfying dessert that can be enjoyed in many different ways.
