- 4 chicken thighs or breasts, bone-in or boneless
- ½ cup apricot preserves or jam
- 2 tablespoons Dijon mustard
- 1 tablespoon soy sauce (optional)
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Preheat the Oven
Preheat the oven to 190°C (375°F). Lightly grease a baking dish. - Prepare the Sauce
In a small bowl, mix apricot preserves, Dijon mustard, soy sauce if using, garlic powder, salt, and black pepper until smooth. - Coat the Chicken
Pat the chicken dry and place in the baking dish. Brush the apricot sauce evenly over each piece. - Bake
Bake for 30–40 minutes, basting halfway through, until the chicken is cooked through and the internal temperature reaches 74°C (165°F). The sauce should be bubbly and slightly caramelized. - Serve
Remove from the oven and let rest for a few minutes before serving.
