Baked Apricot Chicken

Ingredients

  • 4 chicken thighs or breasts, bone-in or boneless
  • ½ cup apricot preserves or jam
  • 2 tablespoons Dijon mustard
  • 1 tablespoon soy sauce (optional)
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat the Oven
    Preheat the oven to 190°C (375°F). Lightly grease a baking dish.
  2. Prepare the Sauce
    In a small bowl, mix apricot preserves, Dijon mustard, soy sauce if using, garlic powder, salt, and black pepper until smooth.
  3. Coat the Chicken
    Pat the chicken dry and place in the baking dish. Brush the apricot sauce evenly over each piece.
  4. Bake
    Bake for 30–40 minutes, basting halfway through, until the chicken is cooked through and the internal temperature reaches 74°C (165°F). The sauce should be bubbly and slightly caramelized.
  5. Serve
    Remove from the oven and let rest for a few minutes before serving.

Serving Suggestions

Serve with steamed rice, roasted vegetables, or a simple green salad for a sweet and savory meal.
